Bread machine Herb Bread

Before we get too far, do you have a bread machine? If not, it’s time to get one! I’ve had mine for many years and I have used it more times than I could count. I always recommend using it on dough cycle and then baking the bread in the oven. After the dough cycle is done, you can shape the loaf for bread or make smaller rolls and bake a delicious herb buns.

I use a Breadman bread machine. It does the trick and mine is over 15 years old, so I guess it was worth the investment! Here is a much newer (and probably better) Breadman.

Step 1: Start by Adding Herbs to the Bread Machine Bowl

** It’s important that you place ingredient IN ORDER LISTED! This is because you want the wet ingredients at the bottom for proper mixing. If you don’t do this, your bread may not turn out as desired.

Herbs that I use for my bread machine herb bread with my favorite being rosemary.

Start by choosing your herbs. I used Rosemary, Thyme, Green Onion and Basil in this bread loaf. I always go a little heavy on the Rosemary because I just love the taste and aroma in my bread. Don’t be afraid to experiment a little with the herbs. You can mix and match herbs you think would mix well and make different types of herb bread. I added approximate measurements to this recipe, but in reality, I just choose my herbs and never really measure them.

Once herbs are off the stem, I chop them up and them place in the bottom of the bread machine bowl.

Step 2: Warm Up Milk and Add Egg and Butter

It’s important to warm the milk for a bit. Don’t let it get too hot and you can’t use it cold. You want it warm. This is what helps activate the yeast and give your bread the rise you want. I add the milk to a microwave-safe bowl and I place the butter in the bowl with the milk. This gives the butter slight melt. Probably not necessary, but I’ve always done it this way. Microwave for 1 minute. Then add to bread machine bowl with herbs. Next, crack your egg and place in bowl with the milk and herb mixture.

Butter, yeast and egg are very common bread ingredients.

Step 3: Add Dry Ingredients

Next, add the flour, sugar, salt and yeast to bread machine bowl. Voila! It is that easy.

Step 4: Set Your Bread Machine to “Dough Cycle”

Now that all your ingredients are in the bowl by order, you set your machine for the “Dough Cycle”. I’m sure all machines are different, but mine takes 1 hour and 20 minutes to complete. These really easy steps will make your homemade herb bread feel like a breeze!

Step 5: Shape and Bake

After 1 hour and 20 minutes, my dough is ready to bake! This recipe makes a pretty large amount of dough, so I always cut my dough in half and make 2 loaves. I either freeze the second (after baking) or give it away as a gift, which is always a hit. Simply cut the dough in half and roll it into an oval shaped load and place in a bread pan.

**BIG HINT!! I always always use a stone loaf pan. They’re a little heavier, but my bread cooks to perfection. I swear by this!

Here is the Pampered Chef Stone Loaf pan that I use. I’m surprised that I actually found it on Amazon! If you can’t find a Pampered Chef, I am guessing other brands of stone would do just fine.

If you would prefer to make herb buns, you could cut the dough into smaller (about 2″) balls and add to a cookie sheet.

Time to let your dough rise! I usually wait about 1 hour. DON’T TOUCH THE DOUGH when it’s in its rising state! It will deflate. Just let it be. When I get about 45 minutes in, I start the oven. Set to 350 degrees.

After oven is preheated and dough is ready, bake at 350 degrees for 25 minutes. The top of the loaf will be a golden brown. Let the bread sit for 10 to 20 minutes. Take out of the pan and let it completely cool before packaging bread. ENJOY THIS ROSEMARY BREAD RECIPE. It is a treasure!
